Hemingway’s Restaurant has an immediate position available for a Full -time Lead Line Cook. This position is responsible for ensuring the highest quality of culinary service for our hotel guests. In addition, he/she maintains consistent food preparation and plate presentation for our ala carte restaurant and catered events.

What You Will Bring To The Role:
The Lead Line cook plans, preps, and set ups quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications. He/She directs, trains, and monitors performance of Line Cooks. He/She also maintains organization, cleanliness and sanitation of work areas and equipment.

Some of Your Responsibilities Would Be:
– Cooking from a la carte menu with an attention to quality food preparation and presentation
– Responsible for placing weekly food orders
– Assisting Executive Chef with weekly scheduling
– Responsible for maintaining the kitchen in the absence of the executive Chef
– Creating nightly specials
– Must be familiar with health and food safety requirements
– Know and complies with standard portion size, cooking methods, quality standards, kitchen rules , policies and procedures
– Stocks and maintains sufficient levels of food products to ensure smooth restaurant service
– Maintains a clean and sanitary work station area including tables shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment
– Assist in the daily cleaning of pantry, cook line, prep area, dish area and all kitchen facilities

Minimum Qualifications:

– Candidate’s must have or complete a Food Handler’s certification within three month’s of hire.

– Candidates must be willing to work a flexible schedule that includes weekends, nights, and holidays

– Candidates must be able to stand/walk for a full shift; bend, stoop and reach overhead; push and pull up to 100lbs and lift up to 75lbs.

– Minimum of two year’s of culinary experience in an ala carte restaurant working as sauté, grill and pantry cook.

– Experience with Microsoft Outlook and food purchasing systems, preferred
